Salmon with Mango Chutney Recipe

With summer around the corner, supermarkets will soon be stocked with delicious fruits. Unless you live in a tropical state/country, this is an exciting time of the year for those who crave fresh summer fruits. I mean, who doesn’t love the taste of fresh, juicy watermelons, papayas, cantaloupes, kiwis, honey dew melons, pineapples, and my absolute favorite, mangoes!

Be sure to find ways this summer to incorporate some of these fresh fruits into your favorite dishes. Not only is it good for you (so many nutrients), but it will make dinner time more exciting and fun! Check out this colorful dish I created from scratch using the below ingredients:

  • Wild Salmon
  • Dash (Onion & Garlic Seasoning)
  • Honey Mangoes
  • Avocados
  • Scallions (Green Onions)
  • Green Beans
  • Tomatoes
  • Onions
  • Thyme

I’m not going to lie, when I cook I don’t use measuring cups and I can’t retrace my steps to tell you exactly step by step, how to make this dish as tasty as I did. But one of the fun things about cooking is it’s supposed to be fun, fun, fun! Here are some tips:

  • Bake the Salmon at 350 degrees for at least 30 minutes.
  • Dice mangoes, onions, scallions and mix in white sugar and vinegar; simmer stove top for 15 minutes to pour over salmon once it’s done.
  • Dress the Salmon with Tomatoes, Onions, and Scallions; Sprinkle Mrs. Dash seasoning on top with a drizzle of Olive Oil; Put it in the oven.
  • Get ready to taste a flavorful dish bursting with rich island flavor!

It's OTK - Transitioning into Spring


Perfect outfit to transition from winter to spring? What's better than a pair of over the knee (OTK) boots and a long sleeve shift dress! If you live up north, let's be honest it's not exactly shorts and flips flops weather yet; so combining a long sleeved shift dress with OTK boots is the perfect combo to tackle that bipolar spring weather. 



Want to add something more to layer onto your already fabulous look? Add a cropped denim vest! If you didn't grab a pair of OTK boots last winter don't worry it's not too late to get one; actually it's the perfect time since most retailers are swapping out their boots for sandals. The Perfect Day to Night Look for Men

Often, we talk about creating the perfect day to night (DTN) look for women, but what about creating the same look for men? Since the seasons are about to change, it is the perfect time to bring out the light weight sport coats, shorts, tank tops, and boat shoes to achieve a killer day to night look. 


Sport Coats

Sport Coats are the most important part of pulling of the overall "night" part of this look. Simply throw it on over your tank and you're ready to go! This is what I consider to be the best dressy casual combination; casual tops paired with a linen sport coat. Since, it's about to be spring/summer color is key; I suggest charcoal grey, coral, mustard yellow, and even a few light shades of blue, but my hands down favorite is navy. 


Tank Tops

You know summer is truly here when tank tops start to make an appearance. Don't be fooled these tops aren't just for the beach or to wear around the house. You can make a true statement by pairing what's meant to be a casual tank with a sport coat. Rock the tank alone during the day and throw on a navy sport coat during the night. This is the most essential staple into creating the perfect day to night look so choosing the perfect tank is crucial.


Shorts

Toss your gym shorts aside for this outfit and bring out those dressy flat front fitted shorts! Every guy should own at least one pair, the possibilities are endless when it comes to pairing these with a variation of tops that are perfect for the summer. My favorite colors are coral, khaki, turquoise, sky blue, and grey. Retailers such as Old Navy, Express, ASOS, and J.Crew are the best place to find an affordable assortment of this summer staple. 


Shoes

Rumor has it that boat shoes are only meant for yacht parties, but that's so false. Boat shoes are the perfect accessory to complete your overall day to night summer look. They are both stylish and comfy, but the best part is no socks are required, so it allows you to slip on and off as you please. Sperry's and Aldo's offer the best variety that won't put a huge dent in your wallet.
